Topic 1: Keys to Food Safety in Foodservice Operation 

Speaker will tackle about the best practices, key concepts, and the science behind critical food safety standards in foodservice operation. Specific topics to cover will be food-borne illnesses, impacts of food-borne illness outbreak to a food establishment, high risk populations, conditions for pathogens to grow (FATTOM) and best practices on how to incorporate keys to food safety (time-temperature control, preventing cross contamination, good personal hygiene, effective cleaning and sanitising) throughout the flow of food.

Speaker: Mr. Anthony Herrera

Anthony Herrera is the lead chemist of Ecolab’s Institutional division in Southeast Asia. In his current role, Anthony is responsible for leading the Corporate Account Technical Service of institutional division (lodging, food services, and facility services) across Southeast Asia. Likewise, he has taken on several roles in Supply Chain since 2002. This includes leading the SHEQ (Safety, Health, Environment & Quality) team of Ecolab Binan plant. He also provided technical support to food and beverage division (food and beverage manufacturing plants).

Anthony is a registered ServSafe® Instructor and Proctor since 2004 actively holding ServSafe certification public training in partnership with University of Asia and the Pacific – Philippines. ServSafe is an ANSI accredited food safety training and certification program administered by US National Restaurant Association. He is likewise an Ecolab certified Green Belt since 2016.

Anthony holds a bachelor’s degree in Food Science and Technology from the Polytechnic University of the Philippines and an MBA from De La Salle University in the Philippines.

Topic 2: Water Safety- Impact of legionella bacteria growth in purpose-built water systems 

Speaker will talk about the exposure risk, managing and controlling legionella bacteria growth in cooling towers. Topics will cover health impact of Legionnaires’ disease outbreak and the need for Aerosol-generating systems such as industrial cooling towers inspected and maintained. Factors to consider when carrying out a risk assessment and implementation of control scheme to prevent legionella growth.

Vijayakumar Naidu (Vijay) takes on the role of Safety, Health & Environment lead, SHE Manager in Singapore. The beginning of Vijay’s career was in the Petrochemical industry in Jurong Island where he ran operations in chemical processing, environmental and utility plants equipped with hydrocarbon crackers, boilers, wastewater treatment, and cooling towers. In Ecolab Singapore, he is managing occupational health and safety programs in Risk Management, Incident Management, Behavioral-Based safety programs, and Audits. A registered Workplace Safety and Health Officer (WSHO) under the Ministry of Manpower (MOM) since 2018, he is also a certified ISO45001:2018 auditor.
